  • 1 celery stalk chopped

  • 1 cup diced tomatoes
  • 1 cup small pasta
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh parsley chopped

Cooking Instructions
 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and cook until soft.
  3. Stir in carrot and celery.
  4. Cook for a few minutes.
  5. Add diced tomatoes and cooked beans.
  6. Pour in vegetable broth and bring to a boil.
  7. Add pasta and reduce heat.
